Ingredients

  • 1 cup granulated sugar
  • 1 cup packed light brown sugar
  • 4 large eggs
  • 1 cup vegetable oil
  • 2 cups self-rising flour
  • 1 teaspoon vanilla extract
  • 1 cup chopped pecans

Method

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.
  2. Mix the Wet Ingredients: In a large bowl, beat together the granulated sugar, brown sugar, and eggs until well combined. Add the vegetable oil and vanilla extract, mixing until smooth.
  3. Add the Dry Ingredients: Gradually add the self-rising flour to the wet ingredients, mixing until just combined. Be careful not to overmix.
  4. Fold in the Pecans: Gently fold the chopped pecans into the batter.
  5. Bake: Pour the batter into the prepared loaf pan. Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
  6. Cool & Serve: Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
