Ingredients

  • 1 pound ground beef
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 2 cups BBQ sauce
  • 4 cups diced potatoes
  • 1 cup shredded cheddar cheese

Method

  1. Preheat oven to 375°F (190°C). Grease a 9x13-inch baking dish and set aside.
  2. Cook the ground beef: In a large skillet, brown the ground beef over medium heat. Add the diced onion and red bell pepper and cook until they soften, about 5 minutes.
  3. Add BBQ sauce: Stir in the BBQ sauce and simmer for 5-7 minutes until the mixture is heated through and slightly thickened. Remove from heat.
  4. Prepare potatoes: While the beef mixture is simmering, boil the diced potatoes in a pot of salted water for about 10-12 minutes until they are just tender. Drain and set aside.
  5. Assemble the casserole: Layer the boiled potatoes in the prepared baking dish. Pour the BBQ beef mixture over the potatoes and spread evenly.
  6. Top with cheese: Sprinkle shredded cheddar cheese on top of the beef mixture.
  7. Bake: Place the casserole in the preheated oven and bake for 20-25 minutes until the cheese is melted and bubbly.
  8. Serve and enjoy: Let the casserole rest for 5 minutes before serving. Garnish with green onions or parsley if desired!
